Tzatziki
A Greek yogurt-cucumber-dill-garlic spread. Amazing on bread, meat, and veggies. A Greek Yia-Yia taught me how to make this, so ingredient amounts are approximate.
Ingredients
1 container whole-fat Greek yogurt (FAGE is the best)
1 large seedless cucumber
2-3 cloves garlic
About 1 T fresh dill, but you can add less/more dill to taste
Olive Oil
White Wine Vinegar
Salt
Instructions
1. Peel and grate cucumber on a coarse grater
2. Let the cucumber drain in a strainer while you prepare the rest
3. Salt the garlic heavily and mash to paste with a mortar and pestle
4. Mince the dill
5. Into a bowl, place the garlic and dill, add a splash of oil and vinegar
6. Add the cucumber, after squeezing very firmly to get out water
7. Stir all ingredients
8. Cover and chill until serving, it's better if the ingredients can 'mingle'
